Beef Louise by Faith Gaudlitz (UTSA Honors College Student) I


* 2-3 lbs beef stew meat

* 2 cans cream of mushroom soup

* I envelope Lipton onion soup mix

* 2/3 cup of red wine

* I can sliced mushrooms (optional)

* Fettuccini noodles (can be substituted with rice)


1. Preheat the oven to 325 degrees

2. Place the cream of mushroom soup in a large casserole dish

3. Followed by envelope of onion soup mix

4. Next, mix in the mushrooms

5. Mix in the wine

6. Cut up the meat, if necessary, until smaller chunks and mix in the dish

7. Let cook in the oven for 3 hours

8. 30 min before done, start cooking the noodles – do so according to the box instructions or however you like

9. Serve over noodle or rice, with a side of asparagus, salad, and/or bread.
