Cook.Eat.Write.Repeat: Banana Bread

Banana Bread Recipe by Sebastian Nolasco (UTSA Honors College Student)

Ingredients:
• ½ cup butter
• ½ cup white sugar
• ½ cup brown sugar
• 3 bananas (mashed)
• 3 tbsp. milk
• 2 cups flour
• 1 tsp. baking soda
• ½ tsp. baking powder
• ½ tsp. salt
• 1 tsp. Vanilla
• 1 tsp. cocoa powder

Instructions:
1.) If you only have bananas that aren’t ripe enough don’t worry! Bake bananas at 300 Degrees Fahrenheit until their peels turn black (15-20 minutes).
2.) Mix milk and vanilla.
3.) Combine butter, sugar, eggs, and bananas and beat well ((optionally add a teaspoon of espresso powder).
4.) Sift flour, baking, soda, baking powder, salt, and cocoa powder.
5.) Add the banana mixture to the dry ingredients and add in chopped dark chocolate (you can use other add ins like chopped nuts as well).
6.) Pour batter into a loaf pan and bake at 350 until golden brown.
