Peach Marmalade Pork Chops

Prep Time: 20 minutes
Cook Time: 30 minutes

Ingredients:
* Pork chops/pork chop bites (as many as you need for the people you are feeding)
* 1 onion, diced
* 2 Tablespoons of butter
* 4 cloves of garlic, minced
* 1 and 12 oz jar of peach preserves
* ½ cup of ketchup
* 2 Tablespoons of soy sauce
* ½ Teaspoon of ginger
* ¼ cup of brown sugar
* Salt to taste
* Pepper to taste
* Olive oil

Instructions:
* Rinse the pork chops and dry them.
* Season both sides of the pork with salt and pepper to taste.
* Drizzle olive oil in a pan and heat the pan at medium heat on the stove.
* Cook the pork chops until seared on both sides, it should look like a thin brown crust on the surface of the pork. Remove pork and keep on a plate while making the marmalade.
* Add the butter and onion to the pan, cook until onion browns and softens
* Add the garlic and cook for about a minute
* Add ketchup, soy sauce, peach preserves, brown sugar and ginger.
* Add the pork chops back to the pan, taking care to fully coat each pork chop in the sauce.
* Cook for about 10 minutes or until the middle of the pork chops are no longer pink when cut into.
* Can garnish the pork chops with chopped green onions
