Loaded Potato Soup
Recipe by Kimberly Yanez (UTSA Honors College Student)

Prep Time: 10 minutes
Cook Time: 30 minutes

Video Ingredients:
2 Golden potatoes (chopped)
1/2 stick of unsalted butter
½ cup of sour cream
3 cups of whole milk OR (half-half cream)
3 cups of chicken broth
½ cup of cheddar cheese
½ lb. of bacon
½ Yellow onion (diced)
Salt and lemon pepper to taste

Video Instructions:
1)    Add bacon and cook until crispy
2)    Remove bacon from the pot and set it aside
3)    Add diced onions and ½ stick of butter
4)    Once butter has melted, add 3 cups of chicken broth
5)    Add 3 cups of milk and stir
6)    Add the potatoes
7)    Season with salt and lemon pepper and let simmer until potatoes are soft
8)    Add sour cream
9)    Add cheese
10) Add bacon back in, let simmer for a few more minutes, then serve
